CORNED BEEF PATTIES W/ PINEAPPLE GLAZE

Makes 8 patties

1 (15 oz) can Castleberry's Corned Beef Hash
2 Tbsp. chopped onion
2 Tbsp. chopped green pepper
2 eggs, beaten
2/3 cup bread crumbs
2/3 cup light brown sugar
2 tsp. prepared mustard
1/2 cup pineapple juice
8 pineapple slices

Combine corned beef hash, onions, green peppers, eggs and bread crumbs. Shape into eight patties. Fry in a small amount of oil until patties are lightly browned. Combine brown sugar, mustard arid pineapple juice over low heat until mixture is like a syrup. Place pineapple slices in the syrup until they warm. Serve each pattie with a small amount of syrup and a pineapple slice.
